Lemon Easter Egg (citron velikonoční vajíčko) cookies


We're thinking lemon is a great thing for some festive spring cookies, particularly for Easter! Nothing gives the palate a more refreshing delightful taste of spring than lemons (citron)...

Lemon Easter Egg (citron velikonoční vajíčko) cookies

soften 500 g (1.5 sticks) of butter (maslo)

cream in 190 g (1 cup) sugar (cukr)

whip in 2 eggs (preferably farm-fresh from your market or chicken coop!)

zest in the rind from 1 large lemon (citron)

squeeze the juice from the lemon and add into the mixture

add in 1 teaspoon vanilla or 1 pkg. vanilla sugar; 250 ml (1 cup) of milk (mleko)

sift in 4 teaspoons baking powder, a pinch of salt, and 270-360 g (3-4 cups) of fine flour

Mix thoroughly until fairly stiff (you may need a bit more flour; if so, add some!).  Flour your hands.

Roll into balls, and press down onto a baking sheet covered with wax paper until they form an oval (egg) geometric shape.
Bake at 150C (~325F) just until browning.
Cool.

While these are cooling, mix a thin yellow icing of
200 g (1.5 cups) confectioner's sugar (cukr moučka)
2-3 tablespoon fresh-squeezed lemon juice
zest of 1 lemon

You can vary this to get different colors...use orange zest/juice for orange icing, and lime zest/juice for green icing:
Then drizzle the icings in fun patterns over the cooled cookies.

 Let the icing dry thoroughly, well unless you can't resist trying one or two or three.....

These will delight you for a Merry Easter (Veselé Velikonoce) and Easter Monday!
